{cheesy, onion, bacon biscuits}

Wow. I remember loving the cheddar biscuits that I got as a kid at Red Lobster but they don't even compare to how delicious these are! Cheese, check. Bacon, check. Onions, check. Gooeyness, check. Flavor, check. Breakfast, check. Rolled into a biscuit form, amazing. The Pioneer Woman has outdone herself with this recipe. I can't think of a thing that would have made it better. The batch lasted us almost a week and is perfect served warm. One was plenty for breakfast for me but John preferred two.

{Cheesey, Bacon, Onion Biscuits}

servings: 12

ingredients

2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoons salt
1/4 cups butter
10 tablespoons soy milk (or whatever milk you have)
4 tablespoons vegetable oil
1 egg
10 slices of bacon, fried And crumbled
1 cup finely diced onion
1 cup grated sharp cheddar cheese

directions

Preheat oven to 375ºF.

Stir together flour, baking powder, and salt. Cut in butter until everything is combined.

Combine milk, oil and egg in a separate bowl then whisk together.

Combine flour mixture, milk mixture, bacon, onions and cheddar cheese in a large bowl. Stir gently until all combined.

Spoon batter into greased muffin tins. Bake for 20 - 22 minutes until golden brown. Remove from pan and serve warm.

  1. Yum! That looks delicious. I have bacon in the freezer, and I should try this out. Are you going to go see the Pioneer Woman when she visits Charlotte?

  2. I didn't know she was going to be there, that would be cool but its about a 5 hour drive so we don't go down there too often. Did you get to try the muffins?

  3. Not yet, but it's on my list of things to do, along with lemon bars, and vanilla scones..... Yummm.....
